Simple preparation!
This is the recipe for the best pancakes you'll ever eat! Gofio pancakes with lemon juice and maple syrup. Pancakes with a simple topping will impress you with their distinct and refreshing taste.
Ingredients:
Pancake batter
- 50 g of Maize Gofio Lightly Roasted Viva la Gaia
- 2 eggs
- 5 – 10g of Sugar Coconut Blossom Viva la Gaia
- Half a teaspoon of ground cinnamon
- 1 bag of baking powder
- A teaspoonful of vanilla essence
- 40 g of milk (can be plant-based)
- Vegetable oil for baking
Filling for pancakes
- Juice of one lemon
- Maple syrup
- Icing sugar
Gofio pancakes with lemon juice and maple syrup. Pancakes with a simple topping will impress you with their distinct and refreshing taste.
Preparation
First, separate the egg whites from the yolks and beat the egg whites to stiff peaks with a mixer. In another bowl, beat the egg yolks with sugar. While mixing, add milk, vanilla essence and cinnamon.
Then mix the dry ingredients in a separate bowl. Slowly add the dry ingredients to the liquid mixture while constantly stirring. You should get a moderately liquid mass from which you can make fluffy pancakes. In the end, add to the mass the egg white with light mixing. Let the mass rest for a few minutes. In the meantime, prepare a pan in which you will bake the pancakes and heat the oil.
Using a small spoon, pour the mass onto the pan for the first time (the mass should be for a small pancake), bake until "bubbles" appear, and turn the pancake to cook on the other side. Continue in this way with the rest of the mass. The mass is sufficient to prepare 16 smaller pancakes.
Pancakes can be served with a variety of toppings. This time we used a very simple dressing. The pancakes were topped with lemon juice and maple syrup and sprinkled with powdered sugar. Of course, you can upgrade the recipe yourself with a scoop of vanilla ice cream.
