A cake that will delight all those with a sweet tooth. And it's even healthier! It is made from oat gofio. Yoghurt cake with oat gofio.
Ingredients:
- 3 eggs
- 2 dcl (1 pot) plain yoghurt
- 1.5 yogurt pots of Oat Gofio Viva la Gaia
- 1.5 yogurt pot Sugar Dark Muscoavdo Viva la Gaia
- 1 yoghurt pot of vegetable oil (for example, rapeseed, sunflower, corn)
- 1 package of baking powder
- Lemon peel
- Cinnamon powder
- 1 teaspoon of anise powder

Preparation
Heat the oven to 180oC.
First, separate the egg whites from the yolks and beat the egg whites until stiff peaks form. In another bowl, beat the egg yolks with the sugar until frothy with an electric mixer. Add oil, yoghurt and lemon peel to the yolks.
In a separate bowl, mix the dry ingredients: gofio, baking powder, cinnamon and anise. Add the dry ingredients to the liquid mixture while slowly mixing. In the end, add the egg whites snow and mix it in carefully because you don't want the mixture to collapse. Then transfer the mixture to a baking tray lined with baking paper (instead of baking paper, you can also grease the baking tray with oil and sprinkle with breadcrumbs). Place in the oven (preheated to 180oC) and bake for about 45 minutes.
Cool and serve.
