An excellent vegetable hearty dish for all vegetable lovers! Enjoy the creamy taste of vegetable stew with corn gofio and fresh cream.
Ingredients:
- 3 shallots
- 2 tablespoons of olive oil
- 0.5 kg of green beans
- 6 carrots
- 1 broccoli
- 4 tomatoes
- 1 small teaspoon of Sugar Panela Viva la Gaia
- 1 tablespoon balsamic vinegar
- 1.5 L of water
- Salt (Himalayan Pink Salt Viva la Gaia)
- Dried spices (greens, parsley, chives, thyme, oregano, marjoram, fennel, savory, rosemary)
- 200 g of Maize Gofio Lightly Roasted Viva la Gaia
- Cream Fresh

Preparation
VEGETABLE STEW WITH CORN GOFIO (GROUND ROASTED CORN GRAINS FLOUR) AND SOUR CREAMFry finely chopped shallots in two tablespoons of olive or other vegetable oil of your choice. When glazed, add the green beans, carrot and broccoli cut into small pieces and pour about 1.5 litres of water (the vegetables must be covered) and cook on low heat for 15 minutes.
Add your favourite dried spices. We chose a spice mix.
While the vegetables are cooking, chop the tomatoes and blend them together with the cane sugar and balsamic vinegar until smooth in an electric mixer. Add the mixture to the soup and cook for another 15 minutes.
Measure 200g of corn gofio in a large cup and mix it with some water into a smooth mixture to dissolve and thicken evenly in the soup. The gofio mixture can also be added to the stew in a thicker form with a spoon, creating delicious dumplings. This amount of gofio is suitable for preparing a very thick vegetable soup. Corn gofio is the flour of pre-roasted and ground corn grains and therefore does not require cooking.
You can decorate the final dish with a spoonful of fresh cream.
