Another great hearty vegetable dish! This time we chose minced meat and prepared a recipe for a delicious vegetable stew with minced meat and corn gofio. You will be able to enjoy the flavours of your favourite vegetables. We chose potatoes, carrots, red peppers and green beans.
Ingredients:
- 1 small onion or shallot
- 2 tablespoons of olive oil
- 1 kg of sliced vegetables (potatoes, carrots, red pepper, green beans)
- 1 L of water
- 0.5 kg of minced meat
- 100 g Maize Gofio Lightly Roasted Viva la Gaia
- Bay leaf
- Salt (Himalayan Pink Salt Viva la Gaia)

This time we chose minced meat and prepared a recipe for a delicious vegetable stew with minced meat and corn gofio.
Preparation
Fry finely chopped onions or shallots in olive oil in a large bowl. When the onion is translucent, add the minced meat and let it fry. Then add the vegetables previously cut into pieces. Let it fry a little, then pour about 1 L of water (the vegetables must be covered). Add a bay leaf.
Note: if you chose potatoes, cut them into smaller pieces, as they need longer cooking time than other vegetables.
Add salt and pepper to taste the soup. For a more refined taste of the dish, you can choose one of the unrefined natural salts from the wide range of Viva la Gaia salts.
Cook on low heat for about half an hour.

You can also thicken the dish with corn gofio, enriching it with a pleasant hazelnut taste and round its fullness.
Preparation of gofio: pour the gofio flour into a bowl, into which slowly, while mixing, add the hot liquid that you collected from the stew (about a cup of liquid). Make a smooth mixture. The mixture can be further diluted with liquid to dissolve and thicken evenly in the stew. You can also add the mixture to the stew in a thicker form (if you prefer) with a spoon, creating delicious dumplings.
You can decorate the final dish with a spoonful of sour cream.
