VEGETABLE MINESTRONE WITH CORN GOFFIO (GROUND ROASTED CORN GRAINS FLOUR) AND KRANJSKA SAUSAGE

Fry finely chopped garlic in oil in a large enough container until fragrant. Then add the vegetables and fry them. Pour water (there should be enough water to cover all the vegetables).

If you are a meat lover, you can now add Kranjska sausage (a Slovenian speciality) to the minestrone. The sausage goes perfectly with minestrone. For the vegetarian version, replace the protein with a few more legumes (peas, chickpeas, lentils, etc.)

Cook for a good 35 minutes until the vegetables are cooked to your liking. We recommend that the vegetables remain slightly crunchy and that the potatoes be cooked until soft. Add water if necessary. Add pasta to the minestrone five minutes before the end of cooking, but you can cook it separately beforehand if you prefer it al-dente. Add sweet cream, parsley and basil at the end of cooking.

Minestrone can also be thickened with corn gofio, enriching it with a pleasant hazelnut taste and round its fullness.

Preparation of gofio: pour the gofio flour into a bowl, into which slowly, while mixing, add the hot liquid that you collected from the minestrone (about a cup). Make a smooth mixture. The mixture can be further diluted with liquid to dissolve and thicken evenly in the minestrone. You can also add the mixture to the minestrone in a thicker form (if you prefer that way) with a spoon, which will create delicious dumplings.

The final dish can be decorated with grated Parmesan cheese (our choice) or a spoonful of fresh cream.
