Fast, simple and healthy. Warm salty corn gofio with dried olives. Perfect for a snack, a quick lunch or as an appetizer.
Ingredients:
- 120 g (1 cup) Maize Gofio Lightly Roasted Viva la Gaia
- 100 g of soup base (0.5 cups)
- 2 tablespoons of olive oil
- Clove of garlic
- Salt (Himalayan Pink Salt Viva la Gaia)
- Pepper
- Slices of dried olives
Fast, simple and healthy. Warm salty corn gofio with dried olives. Perfect for a snack, a quick lunch or as an appetizer.
Preparation
Put the chopped garlic with oil, salt and pepper in a food processor and crush. Pour the corn gofio into a bowl and add sliced dried olives. Then slowly add the hot soup and stir until you get a smooth mixture.
Note: A little more broth will give you a smoother texture that will be easier to scoop out of the bowl. A denser texture can be shaped into a hemisphere (right in the bowl) and cut into slices.
For a spicier taste, gofio can be sprinkled with hot paprika or chilli powder before serving. We garnished the dish with corn and corn tortillas and served it as an appetizer.
