MAIZE GOFIO PANCAKES WITH CARAMELIZED APPLE TOPPING

First, separate the egg whites from the yolks and beat the egg whites to stiff peaks with a mixer. Then, in another bowl, beat the egg yolks with sugar. While mixing, add milk, vanilla essence and cinnamon.

Then mix the dry ingredients in a separate bowl. Slowly add the dry ingredients to the liquid mixture while constantly stirring. You should get a moderately liquid mass from which you can make fluffy pancakes. At the end, add to the mass the egg white with light mixing. Let the mass rest for a few minutes. In the meantime, prepare a pan to bake the pancakes and heat the oil.

Using a small spoon, pour the mass onto the pan for the first time (the mass should be for a small pancake), bake until "bubbles" appear, and turn the pancake to cook on the other side. Continue in this way with the rest of the mass. The mass is sufficient to prepare 16 smaller pancakes.

Pancakes can be served with a variety of toppings. In this recipe, the pancakes are topped with caramelized apples and cream.

When you have used the mass and baked all the pancakes, start preparing the topping.

Peel two apples and cut them into cubes. Melt a bit of butter in a pan, add the apples, fry them a little, then sprinkle with sugar and let the sugar caramelize. Then divide the apples among the still warm pancakes. Serve it with whipped cream and vanilla ice cream.
